Black Beans For Tacos Recipe

STEP 1 Heat the oil in a large frying pan and add the garlic. Fry until the onions are golden, then add the beans. Pour in the cider vinegar, honey, and spices, as well as 1 teaspoon or more salt to taste. Cook until warmed through, gently crushing with the back of a wooden spoon, and set aside.

STEP 2 Make the guacamole with a large stone pestle and mortar, but you can also use a medium bowl and a flat-ended rolling pin. 
Make a rough paste of the garlic, coriander, and chilli. 
Scoop in the avocado and crush it roughly - you want it chunky, not smooth. 
Set aside after adding the lime juice.

 

STEP 3 In a small bowl, combine the salsa ingredients. Heat a griddle pan or steamer and quickly griddle or steam a stack of tortillas to warm them up. Warm up the bean mixture again.

STEP 4 To serve, spoon 1-2 heaping tablespoons of beans onto a tortilla. Serve with guacamole, salsa, hot sauce, and a dollop of soured cream or yoghurt on top.
